Preparation of Russian salad (Ecuador)

The delicious Russian Salad is a well-known dish prepared in Ecuadorian gastronomy, it is simple to make and an ideal companion for lunch or dinner.

INGREDIENTS

- Potatoes (3 pounds)
- Carrots (3)
- Beets (2)
- Eggs (3)
- Peas (1 pound)
- Red onion (1)
- Fresh apples (2)
- 1/2 cup of mayonnaise
- Lemon juice (2 tablespoons)
- Oil and salt (To taste)

PREPARATION

First, wash and peel the potatoes, boil them in salted water until soft.

Next, peel the carrots and cut into very small cubes, boil salted water. Add the chopped carrots and peas and cook.

Then, boil the eggs for 15 minutes, remove from water and let chill.

After that, place the onion and apple with lemon, chop the potatoes into small squares and peel and chop the hard-boiled eggs.

Finally, put everything on a tray, add and season with mayonnaise and salt. Refrigerate well before serving.
